Thai Peanut Sauce for Gado Gado

This is a fantastic way to use all the goodness of a season - in a bowl.  Use this sauce with a bowl full of grains and greens. We like to add hard boiled eggs along with our seasonal vegetables.

Ingredients:


​One can coconut milk

1/4 cup Thai red curry paste

¾ cup peanut butter

½ tablespoon salt

¾ cup sugar

2 T of apple cider vinegar

​½ cup water


Put everything into a medium heavy-bottomed pot and bring to a very gentle boil over medium heat, whisking constantly.


Let the mixture simmer for 3-5 minutes over low heat; be careful not to let the mixture scorch at the bottom of the pot.


Take the pot off the heat, let the sauce cool down to room temperature (or slightly warmer), and serve the sauce over a bowl of summer freshness (rice, grated carrots, swiss chard, beets, seeds, tofu, broccoli, cauliflower, zucchinni, etc)
