2 lbs russet potatoes, grated
1 onion
2 eggs
3 T flour (GF works great)
3/4 tsp baking powder
salt and pepper
Mix together in a bowl. Spoon onto hot skillet with ample oil for frying or try the oven baking method. Rena Tuchinsky's idea of oven baking them by oiling muffin tins, filling them half full and baking for 30-40 minutes (until crisy). I like the idea of not standing at the oven and frying.
For topping:
chives, applesauce, sour cream
